Carys Pinot Gris comes from sustainably farmed estate vineyards in Monterey, where cool temperatures and lingering morning fog allow the grapes to ripen slowly while retaining freshness and acidity. The result is a bright, refreshing style that's particularly versatile at the table, from grilled seafood and salads to lighter vegetable dishes.
Aromas of white peach, pear, and fresh green apple lead into flavors of apricot, cantaloupe, and honeydew. Bright acidity keeps the palate fresh and lively, with a delicate, fruit-forward character.
Whole clusters are pressed before the juice is chilled and racked clean. A slow, cool fermentation takes place in flavor-neutral, refrigerated stainless steel tanks to preserve fresh fruit and crisp acidity. The finished wine continues to age in stainless steel and is stored cold to retain its fresh character.
